Awashizuku Sparkling Sake
Description
Before establishing themselves with the Hitachino Nest Beer brand in 1996, Kiuchi had been a sake brewery since 1823. This is a junmaishusake, easy drinking sweet sparkling sake made of pure rice wine that has not been mixed with distilled alcohol and during the mashing stage of production a little sour white koji is added (mould-covered rice that is crucial to all sake production.). This gives the sake a acidity to tone back its natural sweetness, resulting in a refreshing and crips sparking drink.
